The Project
This rollout program delivered MEPF engineering for 33 KFC stores and 7 Tokyo Tokyo stores across both standalone buildings and interior fit-out formats, 40 stores that had to open on schedule, pass brand review, and clear local permitting in dozens of jurisdictions.
Multi-site F&B rollout is a distinct engineering discipline. The economics only work when design is standardized: template kitchen exhaust and equipment power layouts, repeatable grease plumbing details, and pre-coordinated fire suppression packages, each adapted to site conditions without reinventing the store.
Scope Delivered
Mechanical
Kitchen exhaust and fresh air systems, dining area air conditioning, equipment ventilation and heat rejection, templated per brand standard, adapted per site.
Electrical
Kitchen equipment power layouts, panel schedules and single-line diagrams, grounding, and POS/CCTV/data auxiliary systems for each store format.
Plumbing
Grease and kitchen plumbing, hot water systems, water supply, and drainage details standardized across the program.
Fire Protection
Sprinkler design, extinguisher layouts, and kitchen hood fire suppression coordination for every store.
Challenges & Considerations
Rollout programs of this scale live or die on standardization discipline. Every store faces different site realities, landlord provisions that vary by mall, utility capacities that vary by city, LGU reviewers with local interpretations, while the brand demands identical operational outcomes. The engineering answer is a rigorously maintained design template with controlled per-site adaptation: fast enough to hit opening schedules, disciplined enough that store 33 performs exactly like store 1.
